About Victor Leung

I am Victor Leung, founder of Food & Peace. My work sits at the intersection of nutrition science, gut microbiome research, fermented foods, metabolomics, metabolic health, and public nutrition education.

Current Work

I am currently a PhD student/researcher at Imperial College London, where my research focuses on nutrition, the gut microbiome, kefir, metabolomics, and metabolic health. I am also the author of a Chinese book on anti-inflammatory dietary approaches and have built a large Chinese-language nutrition audience through evidence-based science communication.

Mission

Food & Peace exists to make nutrition evidence easier to understand and easier to use. Nutrition advice is often polarized, oversimplified, or disconnected from real life. My goal is to translate research into practical dietary strategies while being transparent about uncertainty, individual differences, and the limits of current evidence.

What I Do

  • Explain nutrition research in plain language.
  • Discuss gut health, inflammation-related nutrition, metabolic health, kefir, fermented foods, and dietary patterns.
  • Provide education-focused nutrition consultation and self-management support.
  • Create bilingual English and Chinese nutrition resources.

What I Do Not Do

I am not a medical doctor or registered dietitian. I do not diagnose, treat, cure, or provide medical nutrition therapy. My work is educational and research-informed.
